Apple Pie Overnight Oats

To make apple pie overnight oats, stew half a sliced red apple with cinnamon and honey for 5 minutes and let it cool. Mix 150ml milk with 50g rolled oats, chia seeds, and Greek yoghurt, spoon it into your jar between two layers of stewed apple, and chill overnight. By morning it tastes like apple crumble.

Apple pie overnight oats in an OATOLOGY jar, layered with cinnamon stewed apple and topped with more, beside a second jar, cinnamon sticks, and a red apple

Ingredients

Makes 1 jar

In the jar tonight

  • Milk to the line on your jar150ml, any milk
  • 1 slightly heaped lid of rolled oatsabout 50g
  • 1 tbsp chia seeds
  • 1 tbsp Greek yoghurt
  • A pinch each of ground ginger, cardamom, and saltoptional

For the stewed apple

  • ½ medium red apple, sliceda firm eating apple, such as Gala or Braeburn
  • ½ tbsp honey or maple syrup
  • 1 tbsp water
  • ½ tsp ground cinnamon
  • A pinch of salt

Method

  1. Warm a small pan over a medium-low heat. Add the sliced apple, ½ tbsp honey or maple syrup, 1 tbsp water, ½ tsp cinnamon, and a pinch of salt.
  2. Cook for about 5 minutes, stirring now and then, until the apple softens. Take it off the heat and let it cool.
    Kitchen tip

Let the apple cool before it meets the oats, so the whole jar goes into the fridge cold.

  3. Pour milk into the empty jar, up to the line on the back (150ml), then tip it into a bowl.
    Kitchen tip

No jar with a milk line? Measure 150ml of milk in a jug and weigh 50g of rolled oats on kitchen scales. Our overnight oats jar has both measures built in.

  4. Add one slightly heaped lid of rolled oats (about 50g) to the bowl with 1 tbsp chia seeds, 1 tbsp Greek yoghurt, and the ginger, cardamom, and salt, if using. Stir well.
  5. Spoon half the apple into the empty jar, pour the oats over it, and top with the rest of the apple.
  6. Seal the jar and put it straight in the fridge overnight.
  7. In the morning, eat it cold, straight from the jar, or tip it into a microwave-safe bowl or small pan to warm it. Too thick? Stir in a splash of milk.

Make it your way

For crunch

In the morning, a scatter of toasted pecans or a spoon of granola over the top turns it properly crumble-like.

Make it vegan

Use a plant milk, a plant yoghurt, and maple syrup instead of honey. The stewed apple and spices carry the flavour either way.

A thicker jar

Stir in an extra spoonful of Greek yoghurt, or a small scoop of vanilla protein powder with a splash more milk.

Your questions

Do you have to stew the apples, or can you use raw grated apple?

Stewed works best, but raw grated apple is fine if you are short on time: expect a softer, fresher jar without the jammy depth. Raw apple browns, so grate it just before eating or toss it in a little lemon juice. The 5-minute stew is worth it.

How long do apple pie overnight oats last in the fridge?

Up to 3 days in a sealed jar in the fridge, kept at 5°C or below. Make it the night before: stew the apple, layer the jar, and chill for at least 8 hours.

Can you eat apple pie overnight oats warm?

Yes, and this is the one that shines warm, like apple crumble. Tip it into a microwave-safe bowl or a small pan, warm it gently, and loosen with a splash of milk. Never put the OATOLOGY jar in the microwave.

Which apples work best for apple pie overnight oats?

A firm eating apple such as Braeburn or Gala, which holds its shape through the 5-minute stew and brings its own sweetness. Bramley cooking apples collapse into a sharp purée and need more honey. Half a medium apple is enough for one jar.

How many calories are in apple pie overnight oats?

Our estimate is about 390 kcal a jar, made as written with semi-skimmed milk and honey. Your choice of milk, yoghurt, and sweetener moves it up or down.
