Kitchen tip
No jar with a milk line? Measure 150ml of coconut milk in a jug and weigh 50g of rolled oats on kitchen scales. Our overnight oats jar has both measures built in.
- Add one slightly heaped lid of rolled oats (about 50g): fill the upside-down steel lid and tip it in.
- Stir in 1 tbsp chia seeds, ½ tsp vanilla, and a pinch of salt.
Kitchen tip
The pinch of salt is deliberate: it sharpens the mango rather than making anything taste salty.
- Add half a mango, diced, and 1½ tsp desiccated coconut, and stir until combined.
Kitchen tip
If your mango is rock hard, let it ripen on the counter first: the recipe cannot rescue a bad mango.
- Seal the jar and put it straight in the fridge overnight.
- In the morning, give it a stir and top with toasted almonds, if you like. Too thick? Stir in a splash of coconut milk.
Keeps up to 3 days, sealed, in the fridge at 5°C or below. The mango holds its colour, so it can go in tonight; add the almonds fresh so they stay crunchy. How long overnight oats last

No fresh mango
Frozen diced mango works straight from the bag, and so does tinned mango in juice, drained well.Extra tropical
Swap the almonds for a scatter of toasted coconut flakes on top.A creamier jar
Stir in a spoonful of coconut yoghurt with the chia. Greek yoghurt works too, though the jar is then no longer vegan.Your questions
How long do mango and coconut overnight oats last in the fridge?
Up to 3 days in a sealed jar in the fridge, kept at 5°C or below. Diced mango keeps its colour far better than banana, so it can chill in the jar from the start. Add the toasted almonds fresh so they keep their crunch.
Can you use tinned coconut milk for overnight oats?
Yes, but dilute it: it is far richer than the carton drink, so mix half tinned coconut milk and half water to make up the 150ml. Straight from the tin it sets very thick and heavy.
Can you make mango and coconut overnight oats with frozen mango?
Yes. Dice it small and stir it in still frozen: it thaws in the fridge overnight while the oats set, releasing its juice into the jar. No need to defrost first, and it makes this a year-round jar.
Are mango and coconut overnight oats vegan?
Yes, as written they are fully plant-based: oats, coconut milk, chia seeds, vanilla, mango, desiccated coconut, salt, and almonds. There is no dairy and no honey to swap out.
How many calories are in mango and coconut overnight oats?
Our estimate is about 360 kcal a jar, made as written with a carton coconut drink, before the almonds on top. Your choice of milk and toppings moves it up or down.
