Banana Bread Overnight Oats
To make banana bread overnight oats, pour 150ml milk into a jar, add 50g rolled oats, and stir in two thirds of a ripe banana, mashed, with 60g Greek yoghurt, chia seeds, cinnamon, vanilla, and honey. In our jar, that is milk to the line, then one slightly heaped lid of oats. Chill overnight, then top with the rest of the banana, caramelised in a pan for 2 minutes.

Kitchen tip
No jar with a milk line? Measure 150ml of milk in a jug and weigh 50g of rolled oats on kitchen scales. Our overnight oats jar has both measures built in.
- Add one slightly heaped lid of rolled oats (about 50g): fill the upside-down steel lid and tip it in.
- Cut a third off the banana, skin on, and keep it for the morning. Peel and mash the other two thirds in a bowl, then stir the mash into the jar with 60g Greek yoghurt.
Kitchen tip
Reach for the spottiest banana in the fruit bowl. The sad, forgotten one is exactly right here: it mashes smoothly and brings the sweetness.
- Stir in 1 tsp chia seeds, ½ tsp cinnamon, ½ tsp vanilla, 1 tsp honey or maple syrup, and a pinch of salt, right to the bottom.
- Seal the jar and put it straight in the fridge overnight.
- In the morning, slice the rest of the banana and warm it in a small pan with 1 tsp olive oil, 1 tsp honey or maple syrup, and a pinch of cinnamon for about 2 minutes, until soft and golden.
- Give the oats a stir, spoon the warm banana on top, and eat it straight from the jar. Too thick? Stir in a splash of milk.

How long do banana bread overnight oats last in the fridge?
Up to 3 days in a sealed jar in the fridge, at 5°C or below. Mashed into the mix, the banana is fine for all 3 days, though it softens the base as it sits, so day 1 or 2 is best. Caramelise the topping fresh, just before eating.
Why use a ripe, spotty banana for banana bread overnight oats?
That is where the sweetness and the banana bread flavour live. As a banana ripens, its starch turns to sugar, so a spotty one mashes smoothly and sweetens the jar. A firm yellow banana tastes flat and mashes into lumps.
Can you skip the caramelised banana topping?
Yes. Mash the whole banana into the jar instead of two thirds. The 2 minutes at the hob are worth it, though: the honey and cinnamon deepen the flavour, and the warm banana contrasts with the cold oats.
Can you make banana bread overnight oats vegan?
Yes, with three swaps: any plant milk to the same 150ml line, a plant yoghurt for the Greek yoghurt, and maple syrup for the honey, in the jar and on the banana. As written, the recipe is vegetarian, not vegan.
How many calories are in banana bread overnight oats?
Our estimate is about 520 kcal a jar, made as written with semi-skimmed milk, Greek yoghurt, and honey, caramelised banana included. Your choice of milk, yoghurt, and sweetener moves it up or down.
